

WHITE WINES
The ideal White Wine displays a perfect balance of Sweetness and Acidity. Both of which are found in the grapes from which the wine is made. The way in which the grapes are handled during winemaking determines the balance of Sweetness and Acidity that will be evident in the finished wine.
RED WINES
The Red Wine taste as with Whites is the product of an interplay bwetween trwo aspects of its flavour, Sweetness and Acidity. What distinguishes the tast of red wine is the presence of a third componant, Tannin. Tannin is found int he grapes skin and pips and makes its way into the flavour of red wine during the pressing of the grapes, when the juice is allowed to remain in prolonged contact with the grape skins.
